My 15 Minute Go-To Meal

This is one of the meals I use when I don’t have a plan and need something quickly. It is healthy, Keto friendly, and made with things you probably keep on hand. In fact, I came up with this a few years ago after searching the pantry for something to eat.

Ingredients:

Start by microwaving the cauliflower rice, according to the package directions. This should take about 5 minutes. While the cauliflower is cooking, pour the olive oil into a deep skillet or pan and saute the chopped onions.

Add the chicken, black beans, Rotel tomatoes, cauliflower rice, and season well with salt and pepper. Heat it thoroughly – This only takes a few minutes.

Add the desired amount of cilantro. This is my favorite part, so I literally add the entire bunch. I usually just use kitchen scissors and cut it over the skillet.

Mix it together well, and cook it for about one more minute. Serve by itself or topped with cheddar cheese.

I don’t know if any of you use bowl cozies or not, but we love them! We use them for both hot and cold foods. I bought the first one at a crafter’s mall, just to help out a good cause. Once I saw how wonderful they were, I couldn’t find the homemade ones, but I did find them on Amazon. In fact, we were so impressed that we gave them for Christmas gifts last year. My 15 Minute Go-To Meal

Ingredients:
1 Pkg. Frozen, Microwaveable Cauliflower Rice
2 T. Olive Oil
1/8 Cup of Chopped Onions
2 Cans of Chicken, drained
1 Can of Rotel Tomatoes
1 Can of Black Beans, drained
Cilantro
Salt & Pepper
Shredded Cheese, if desired

Instructions:

  1. Microwave the cauliflower rice according to the package directions.
  2. Add the olive oil to a skillet and saute the onions.
  3. Add the chicken, Rotel tomatoes, and beans. Season the mixture, stir, and heat well. When the cauliflower rice is finished, add it to the skillet and heat thoroughly.
  4. Cut the desired amount of cilantro into the skillet and mix well. Heat for about one minute longer and serve.
  5. Top with shredded cheese if desired.
