Spanish Chicken & Rice

I hope the monthly menu is helping you in some way. I can say that although I am not sticking to it day by day, it is helping me. For one thing, I actually have the ingredients for meals each night – That is a huge improvement!

Since I didn’t go into very detailed directions on the Spanish Chicken & Rice, I thought I would share it now. It is the easiest thing in the world to prepare.

Ingredients:

Chicken Breasts
Salsa of Your Choice
4 T. Butter (2 for the dish & 2 for the Rice)
Cilantro
Spanish Rice (I use Knorr – Pictured)
Shredded Cheddar Cheese
Salt & Pepper

Directions:

Spray a baking dish with cooking spray and put 2 T. of butter in the baking dish. Add the chicken breasts and season them with salt & pepper. Cover the chicken with salsa and cover with foil. Bake in a 350 degrees preheated oven for approximately 30 minutes. Times can vary according to the size and thickness of the chicken. If nothing else, follow the directions on the package.

When there is about 10 minutes remaining, use kitchen scissors to cut the cilantro directly onto the chicken and then add the shredded cheese. Cover the dish, and finish baking for the last 10 minutes.

While the chicken is cooking, make the rice on the stovetop, following the package directions. Serve the rice on each plate and top with the chicken. You can add more cheese at this point if desired.

You can also use a crockpot if you prefer. Either way is just as easy. There are so many ways you can change it up to meet the likes of your family.
