A Beautiful Wedding with a Crazy Honeymoon
We thought we were grown, but we sure had a lot to learn! Here is the story of our beautiful wedding with a crazy honeymoon.

I cannot believe it has been 40 years since we said, “I do!” We were so young and clueless, yet we thought we knew it all. Everything was planned perfectly, or so we thought. We had a beautiful wedding with a crazy honeymoon!
We can laugh at it now, but we sure were NOT laughing 40 years ago.
A Beautiful Wedding
I have to say that my parents went all out to give us the wedding of our dreams! I loved my dress (puffy sleeves and all), the tuxes for the men, the bride’s maid dresses, and all of the handmade flower arrangements. It was picture perfect – a beautiful wedding!

It is funny to see that even back then, pink and gray were my colors! Gray flowers were very difficult to find, but I was determined!
We celebrated with a traditional reception afterward, where we were in what seemed like a never ending receiving line and photo shoot – have you been there? We followed that with a party at a local lake clubhouse, where we served my sister’s Ag project as the main course. She still hasn’t quite gotten over that. All was going so well…
Until it was time for the honeymoon!
A Crazy Honeymoon

This is where everything started to go downhill. We were so excited – Jay’s parents had purchased us an all-inclusive trip to Jamaica for a week. It is good that everything was included, because we literally had $25.00 in our pockets. Remember how we knew everything? We thought we could make it on that.
The Fiasco
Our flight left on the following Monday morning, so we were up and ready early. Off we went until we got to Royse City, Texas (about 20 miles away). It was then that Jay realized that he didn’t have his birth certificate with him, which was needed to get on the plane.
Of course this was before cell phones, so we just did what we thought would be best – we turned around to go get it. Our flight did leave that Monday morning, but we were not on it!

I don’t think either of us had ever been that disappointed in our lives! It was a package deal, so we missed the entire trip. There was no rescheduling or rebooking – we missed it!
An Alternate Plan
We had to find something to drown out our sorrows. It wasn’t Jamaica, but we made do with …

I guess in the long run, the Lord was watching over us. Pancho’s Mexican Buffet fit into our $25.00 budget. Somehow, I don’t think we would have made it on that in Jamaica.
Jay felt terrible for me, so as we left Pancho’s, we stopped at the Hallmark store next door. The movie Gremlins was really big at the time, so he bought me this little wedding gift – still within the budget, and I still have it!

Jay made it up to me on our 10th anniversary. He totally surprised me with an all-inclusive, week long trip to Jamaica. We enjoyed ourselves and celebrated our 10 years. We definitely spent more than $25.00!
Honeymoon Recipe
Over the years, we have made several trips to Pancho’s, and we remember our crazy honeymoon every time. At some point, Jay finally got me to try the Green Stew, and I loved it. I want to share Jay’s finally perfected version of Pancho’s Green Stew.
Jay’s Green Chili Stew

Ingredients:

- 2 Lbs. Pork, Browned in Oil
- 1 Large Onion, Cut into Small Chunks
- ½ Cup 505 Green Chilies
- 2 Potatoes, Diced
- 1 Can Rotel Tomatoes
- 1 Bunch of Cilantro
- 6 cups (48 oz.) Chicken Broth
- Seasoning Salt, Pepper
Directions:
This is one of those easy “dump” recipes.
- Brown the meat.
- Add all of the other ingredients.
- Cook in an Instapot until it is done (according to Instapot directions).

If you don’t have an Instapot, brown the meat in a large soup pot or Dutch oven, add the other ingredients, and cook on the stove. You will need to add water or chicken broth as the liquid evaporates. Cook it until the potatoes are tender. Enjoy!

Anonymous Wedding Gift

While I have the opportunity, I want to publicly thank the person who gave us this clock as a wedding gift. It did not have a card or tag with it, and we have wondered all of these years who gave it to us.
Of course there was no social media back then, so it was a little more difficult to get this kind of information. We have used it everyday since we got it. Jay had to replace the clock parts once, but it is still going. We are very thankful for it! If it happened to be you, please let me know!

As I look back on the past 40 years, I am thankful. I am thankful for my husband and the family we raised. I am also thankful for a beautiful wedding with a crazy honeymoon. They both have given us priceless memories, and some of those we can laugh at now!

Oh my! You must have been so disappointed! I can’t imagine. I’ve heard of people not being able to board because the reservations were made in the bride’s “new” last name – and of course she didn’t have ID with that name yet. How sweet that you went for your 10th!
