New Recipe to Try – Buffalo Chicken Stuffed Bell Peppers

My daughter-in-law came up with a new recipe, and she really liked it. I have added it to the menu for May and will definitely be trying it. She started with a rotisserie chicken and the pictured ingredients. She prepared the rice and did a quick stir-fry of the chicken and vegetables, adding in the Buffalo Sauce to taste. Then she layered everything in a hollowed bell pepper – rice, chicken/vegetables, cheese. She baked it just long enough to melt the cheese, and then drizzled more of the Buffalo Sauce on top of it.

1Pepper Steak in the Crock PotAdd beef tips & 2 jars of beef gravy to a crock pot on low – add 3 bell peppers cut in chunks and 3 bundles of green onions cut in 1 inch pieces. Add lots of pepper & cook until the meat is tender. Serve over rice.

4Queso Chicken Bake Chicken, Serve over rice, Top with Rotel Cheese Dip

11Salmon BowlLightly saute’ salmon pieces and asparagus ends. Start the bowl with Jasmine Rice, top with Salmon mixture, chopped avocado, and top with cilantro and your choice of dressing.
