My Favorite Easy Homemade Chicken Pot Pie Recipe

Comfort food is calling! My favorite easy homemade chicken pot pie recipe is the answer! It is the ultimate comfort food!

Growing up, I always thought chicken pot pie came in a small pie tin in the grocery store freezer section. I don’t remember ever having it, but I didn’t think I would be a fan!

Many years ago I found Mary Cameron’s original version of this chicken pot pie recipe in one of our old church cookbooks. (You know that is where to find the best recipes!) I don’t know what made me ever try it for the first time, but I am glad I did!

We have tweaked it over the years to fit our family, and you can do the same. We love the top crust, so this recipe is close to a double crust. Jay does not like lima beans, so we watch which mixed vegetables we get. Tweak it to fit your family’s likes.

Easy Chicken Pot Pie Recipe

Chicken Pot Pie Filling Ingredients

  • Buttery Crust Ingredients

Instructions

  1. Mix the first 5 ingredients together and pour into a greased 9X13 baking dish. (I use olive oil spray.)
  2. Mix the flour and milk together until all lumps are gone. Whisks work very well.
  3. Melt butter and add it to the flour mixture. Mix well. 
  4. Pour the crust mixture over the filling. 
  5. Bake in a 400 degrees preheated oven for 1 hour. (The crust should be a deep golden brown.)

Baking time may vary according to your oven. If the top of the pie starts getting brown, but it is not cooked thoroughly, cover the top of the crust with aluminum foil.

I cannot even begin to explain how delicious the top crust is on this savory pie. It has so much flavor and comes together so nicely with the creamy chicken mixture.

This comfort dish is an easy way to please your whole family. It is very flavorful, and it is even delicious warmed up the next day.

Additions, Tips, and Ideas

  • Use rotisserie chicken.
  • Use leftover turkey after Thanksgiving.
  • Season with salt and black pepper.
  • If you don’t like frozen peas, buy the frozen vegetables you like to create your own mixed vegetables.
  • Bake the chicken pot pie in a pie plate (or two) for presentation.
  • Store leftover chicken pot pie in an airtight container in the refrigerator.

This easy Chicken Pot Pie recipe has been one of my family's favorites for years! The crust is amazing!!!

Ingredients

  • 2 Cups of Cooked Chicken, Diced (I have used canned chicken in a pinch.)
  • 2 Cans of Cream of Chicken Soup
  • 1 Cup of Chicken Broth
  • 1 Pkg. of Frozen Mixed Vegetables
  • 1 Large Potato, Cubed
  • 1 1/2 Cups of Flour
  • 1 1/2 Cups of Milk
  • 1 1/2 Sticks of Butter, Melted

Instructions

  • Mix the first 5 ingredients together and pour into a greased 9X13 baking dish.
  • Mix the flour and milk together until all lumps are gone.
  • Add the melted butter to the flour mixture and mix well.
  • Pour the crust mixture over the filling.
  • Bake at 400 degrees for 1 hour.

Notes

Oven times are different, so watch the crust. If it starts getting dark but still needs more time, cover the top loosely with aluminum foil.

  1. Chicken pot pie is one of my all time favorite meals, Susan. A good one is so hard to find though so I’m excited to try this recipe.
