The Best Pumpkin Delight Cobbler Recipe

It is pumpkin season, and this pumpkin delight cobbler recipe screams ultimate fall dessert! It is so tasty and delicious with just the right amount of pumpkin flavor.

You can find so many pumpkin desserts this time of the year. There are different varieties of a pumpkin dump cake, pumpkin custard, pumpkin muffins, traditional pumpkin pie, and of course pumpkin spice latte – I think that counts as a dessert.😂

I pretty much love all things pumpkin, but the most delicious fall dessert I know is this Pumpkin Delight Cobbler.

The Source of the Recipe

I met Traci Suits in the early 2000s. She and her husband were over our youth group for a time, and we became good friends.

At the time, I had a women’s ministry/blog called Out of the Nest and Beyond, and I shared recipes from time to time. (Similar to now)😊

We had some church event, and Traci brought this delicious pumpkin cobbler she called, Pumpkin Delight. I thought it was the best pumpkin delight dessert I had ever had!

​Traci knew how much I loved it, and the next time I saw her, she had this hand written recipe ready for me. She told me I could share it on the blog back then, and I am sure she would feel the same about it now. She was never stingy with anything, always a giver!

Traci passed away suddenly and unexpectantly at a young age back in 2009. Now when I see this handwritten recipe for her Pumpkin Delight, it just makes me smile. 

Pumpkin Delight Cobbler Recipe

Ingredients:

Ingredients for baking Pumpkin Delight Cobbler, including a box of yellow cake mix, a bag of cane sugar, a can of pumpkin, evaporated milk, a stick of butter, three eggs, chopped walnuts, a container of pumpkin pie spice, salt, and a recipe card are arranged on a white cloth on the counter.

Instructions:

  1. In a large bowl, add the pumpkin, canned milk, eggs, sugar, salt, cinnamon, and nutmeg. Mix well.
  2. Spray a 9X13 baking dish and pour the pumpkin mixture into the dish.
  3. Sift 2 cups of the cake mix over the pumpkin mixture.
  4. Add pats of butter on top of the cake mix, and sprinkle the pecans on top of it.
  5. Bake at 350 degrees for 50-60 minutes. The top of the cobbler will be a golden brown color.
  6. Serve warm and top with Cool Whip or Vanilla Ice Cream on the individual servings.

The Finished Product – Pumpkin Delight Cobbler

As mentioned in the recipe, you can also serve it with a big scoop of vanilla ice cream on top. That is also delicious!

There is no way to fully show the scrumptious pumpkin layer on the bottom of the baking dish. This is the best I can do without you being here with me. In addition, the melted butter gives it a buttery pecan crust that is sweet and crunchy. It is the perfect fall dessert.

Other Thoughts

  • It is great warm, at room temperature, or cold right out of the refrigerator.
  • Keep leftovers covered with plastic wrap or aluminum foil.
  • Add pumpkin pie spice for more pumpkin flavor.
  • I use a whisk to mix the pumpkin mixture instead of using a hand mixer.

Ingredients

  • 1 Can of Pumpkin Puree (Not Pumpkin Pie Filling)
  • 1 Large Can of Evaporated Milk
  • 3 Eggs
  • 1 Cup White Sugar
  • 1 1/2 t. Salt
  • 1 t. Cinnamon
  • 1/4 t. Nutmeg
  • 1 Yellow Cake Mix
  • 1 Stick of Butter
  • Chopped Pecans (Desired amount)
  • Cool Whip or Vanilla Ice Cream (Optional)
