Quick and Easy Creamy Tortellini Soup Recipe
We had tortellini soup for the first time a couple of years ago and have loved it ever since. Since then I have added a few simple ingredients that our family enjoys. Here is my quick and easy Creamy Tortellini Soup recipe. Enjoy!

This is a very hearty soup and the perfect comfort food! Whether it is in the dead of winter and you need something to warm you, or you are in the summer heat, this comforting soup will hit the spot!
What is Tortellini
Until a couple of years ago, I had no idea what was in tortellini. They are just a little cheese filled pasta that has been twisted like a bow. They are really delicious and take very few minutes to cook.

Creamy Tortellini Soup Variations
This soup is very versatile. We like to add Italian sausage to ours, but you could use ground beef, ground turkey, or leave the meat out altogether and have a vegetarian tortellini soup.
It also calls for fresh spinach, which is delicious in the soup. However you could also omit it if you wanted to. I will say though that Jay hates spinach but really likes it in this soup. It does not taste like spinach from a can.
One last thing – If you want the soup to be lighter, you can leave out the cream. The heavy cream just makes it a little thicker and more robust.

The last time I made this creamy soup, I ended up adding a can of diced tomatoes to the soup as well. We really liked the added texture and taste. Of course they are also optional.

Instructions
- Add olive oil and the diced onion to a large soup pot or Dutch oven. Sauté onion on medium-high heat for 2-3 minutes.
- Add the mild Italian sausage to the diced onion and brown. Make sure the meat is cooked thoroughly.Â
- Remove the meat from the pot and let it drain while you prepare the rest of the soup. Leave any oil or liquids in the pot.
- Add the fresh spinach leaves and garlic powder to the pot and sauté until it cooks down. Stir frequently.
- Pour the chicken stock/broth over the spinach and bring to a gentle boil.
- Once it is boiling, add the crushed tomatoes and the diced tomatoes.
- Season the soup with salt and black pepper and let it boil for 7 minutes.
- Add the tortellini and cook according the the package directions. Mine only takes 3 minutes.
- Remove from heat and add the Italian sausage back into the soup mixture.
- ​Pour in the heavy cream and stir.
- Top each individual bowl with shredded Parmesan cheese.

Other Ideas and Tips
- Use as many fresh ingredients as possible.
- Season with Italian seasoning, red pepper flakes, and or fresh thyme for extra flavor.
- Add shredded chicken breast for a creamy chicken tortellini soup.
- If you are watching your sodium intake, use a low sodium chicken broth.
- Garnish with sprigs of fresh basil.
- It is delicious served with garlic bread or some sort of crusty bread.
- Store leftover soup in an airtight container in the refrigerator.

Creamy Tortellini Soup

This creamy tortellini soup is very hearty. It is the perfect comfort food!
Ingredients
- 1 Lb. Mild Italian Sausage, ground
- 1/2 of a Yellow Onion, diced
- 10 oz. Package of Regular or Baby Spinach, fresh
- 64 oz. Chicken Stock/Broth
- 28 oz. Can of Crushed Tomatoes
- 14.5 oz. Can of Diced Tomatoes
- Cheese Tortellini Pasta (I use frozen tortellini, but you could also use fresh tortellini.)
- 1 Cup of Heavy Cream
- Salt, Black Pepper, Garlic Powder (to taste)
- 2 T. Olive Oil
