Easy Jalapeno Cheese Fudge: A Delicious Low Carb Appetizer

This Jalapeno Cheese Fudge is one of our favorite appetizers. It is great for get togethers, parties, or just to keep around the house for a snack.

For years we have called this “jalapeno fudge.” For clarification reasons, I am adding the word cheese to the title. You will not find any confectioners’ sugar in this savory fudge recipe! 

Jalapeno Cheese Fudge

This is one of those recipes that you don’t really have to measure. Add what you want and leave out what you don’t like. Make it as spicy or as mild as you want, and enjoy this low-carb appetizer!

In the past, I have used store bought Non-Stick Cooking Spray. I just recently purchased this oil sprayer to use instead. I control what type of oil I add to the bottle, and it works great.

Instructions

  1. Preheat the oven to 375 degrees.
  2. Spread the cheddar cheese onto the bottom of a lightly sprayed baking dish. I use an 8X11 dish, but you can use a square pan if that is what you have.
  3. In a medium to large bowl, mix eggs, green sauce, and any additional ingredients together well.
  4. Pour the egg mixture over the cheese and spread it out if needed to cover all of the cheese.
  5. Bake for 45 minutes or until it is golden brown and set in the middle.
  6. Let it cool before cutting into small squares.

Other Ideas and Tips for Jalapeno Cheese Fudge

  • Store leftovers in an airtight container in the refrigerator.
  • Use any mixture of cheddar you want (mild, medium or sharp cheddar cheese, Mexican blend, or any other blend.)
  • If you want a little bit of a jalapeno kick, add fresh jalapeno peppers and leave some of the seeds when dicing them.
  • If adding jalapeno peppers, you can get them more evenly throughout the dish it you place them directly on top of the cheese instead of in the egg mixture.
  • You can add more green sauce if you like the taste, up to a cup.

Helpful Tip with Eggs

When working with eggs, I always break each egg into a small bowl or ramekin before adding them to the mixture. I feel like most people do this to make sure the eggs are good. However, I now have a new tip:

Crack the eggs into a plastic bag on the counter, and the eggs will not make a mess on your kitchen counter. Once you use the eggs, the bag serves as a trashcan for the eggshells.

  1. Oh my word, Susan, I need to make this for the Super Bowl! I’ve never heard of it but I love all the ingredients on your list. Plus, my family adores cheese and spicy things so I’m excited to try this recipe. It looks amazing! Big hugs, CoCo PS: Thank you for sharing the egg trick.
