Quick and Easy Green Chile Stew with Pork Recipe

In our younger years, we used to eat at a Mexican buffet restaurant pretty often. Jay always got the green chili stew with pork. I didn’t think I would like it, so it took me a few years to even try it.

Once I tried it, it was my favorite thing on the menu. After several attempts of creating this delicious stew at home, Jay finally mastered it! See his quick and easy Green Chili Stew with Pork Recipe.

Green Chili Stew with Pork

This is an easy dump and go recipe. The most difficult part is cutting up the vegetables! The cook time will depend on the method you choose to cook it.

Ingredients

Instructions

This is one of those easy “dump” recipes. If you use an InstaPot or a slow cooker, your preparation will not take a lot of time.

A spoon lifts a hearty soup with chicken and vegetables from an Instant Pot, its steam rising like memories of a beautiful wedding and a crazy honeymoon. The pot sits on the kitchen counter, framed by wooden cabinets.

Instructions

  1. Brown the meat.
  2. Add all of the other ingredients.
  3. Cook in an Instapot until it is done (according to Instant Pot directions).

Other Options

Stovetop

If you don’t have an Instant Pot, you can use a large Dutch oven and cook it on the stove. You would need to keep a closer eye on it and add water or chicken broth as the liquid evaporates. Start out at a boil and then cook it on medium to medium low heat until the potatoes are tender. 

Slow Cooker

You could also use a slow cooker. If that is your choice, brown the meat on medium-high heat in a skillet before adding it to the slow cooker.

Optional Ingredients

  • Chopped Chicken Breasts instead of Pork
  • Garlic Cloves
  • Hatch Chiles
  • White Beans or Pinto Beans
  • Sweet Corn
  • Fresh Jalapeno Peppers for a little bit of extra spice

Serve With

  • Sour Cream
  • Salsa Verde
  • Fresh Lime Juice
  • Tortilla Chips
  • Flour Tortillas
  • Avocados

Green Chili Stew

Cook Time 40 minutes

Ingredients

  • 2 Lbs. Pork, Diced and Browned in Oil
  • 1 Large White or Yellow Onion, Cut into Small Chunks
  • ½ Cup 505 Green Chilies (Sauce)
  • 2 Potatoes, Diced
  • 1 Can Rotel Tomatoes
  • 1 Bunch of Fresh Cilantro
  • 6 cups (48 oz.) Chicken Broth
  • Seasoning Salt, Pepper

Instructions

  1. Brown the meat.
  2. Add all of the other ingredients.
  3. Cook in an InstaPot until it is done (according to the InstaPot directions). Approximately 40 minutes.

Notes

If you don't have an InstaPot, follow the same directions using a large Dutch oven and cook on the stove. You will need to add water or chicken broth as the liquid evaporates. Cook it until the potatoes are tender.

I love this green chile stew recipe, just the way Jay makes it. However, if you don’t like spicy food, you can make it with a milder green chile sauce.
