Easy Pepper Steak in the Crock Pot: A Weeknight Favorite

This pepper steak dish is so full of flavor, and the meat turns out so tender. The bite sized pieces will literally melt-in-your-mouth.
This is comfort food without the fuss – just a little prep, and dinner is ready when you are.
Easy Crockpot Pepper Steak Recipe
When we got married so many years ago, I could not cook! My mother-in-law probably felt sorry for my husband, so she made me a steno pad filled with their family favorite recipes. This is a priceless little book, stains and all!

We loved the taste of this homemade recipe, but the process was a little more work than I bargained for. Over the years, Jay adapted this recipe to a crock pot version to help with our busy weeknights. It is so simple and delicious!

- Cut the beef into bite sized pieces. Transfer beef to the crock pot. Season generously with seasoning salt and course black pepper.
- Pour the brown gravy over the beef and stir together.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours. The cook time is up to you.
- Cut the green bell peppers and the green onions into 1 inch sized pieces and store in the refrigerator until later.
- In the last hour of cooking, add in the bell peppers, green onions, and mushrooms. Season the vegetables with more seasoning salt and lots of course ground black pepper. Stir together well.
- After the crock pot goes off, ladle the pepper steak over a bed of rice. Enjoy!
If you want the vegetables to be softer, add them at the 2 hour mark.

Tips and Variations
- Use other vegetables: Snow Peas, Bok Choy, Baby Corn, Large White Onion, etc.
- Spice it up a little with Red Pepper Flakes or Sriracha sauce.
- Season with garlic powder or garlic salt.
- Add a Yellow or Red Bell Pepper in place of the green bell peppers. Add extra bell peppers or onions if desired.
- Make your own homemade beef gravy or savory sauce.
- Serve over a bed of white rice (or other rice: jasmine rice, brown rice, etc.), cauliflower rice, egg noodles, or other pasta.
- Top with sesame seeds for a nice finishing touch.
- We serve the pepper steak over rice as a full meal. However, you can add your favorite side dishes if desired.
- Store leftovers in an airtight container in the refrigerator.

- 2 Jars of Beef Gravy
