Quick and Easy Fiesta Creamy Chicken Noodle Soup Recipe
When I think about quick and easy soups, this Fiesta Creamy Chicken Noodle Soup comes to mind. It is one of the creamiest soups I have ever eaten!

Do you ever just go through your pantry and throw what you have together? That is how this delicious creamy chicken soup recipe came about many years ago. It may have come about out of desperation, but it hung around because of ease and taste.
Fiesta Creamy Chicken Noodle Soup Recipe
Like I mentioned, instead of making a trip to the grocery store, I found all of these ingredients in my pantry and put them together. This soup is very versatile and can be changed up to fit the needs of each family’s personal preferences.
As an example, although we named it Fiesta Creamy Chicken “Noodle” Soup, we prefer macaroni instead of typical spaghetti noodles. Use whatever you have or what you prefer.
Simple Ingredients

This quick and easy soup is a favorite recipe of ours. You only need simple ingredients, and the Velveeta makes it very creamy.

- Saute’ the onion in the olive oil until softened (on medium heat).
- Add the chicken. If you are using canned chicken, break the chicken up into smaller pieces. If you are using fresh chicken, brown the chicken lightly.
- Add the chicken broth and Rotel tomatoes.
- Add 6-8 Cups of Water and bring to a boil.
- Add the macaroni and cook according to the package directions.
- Add the optional cilantro during this time.
- When there are about 3 minutes left for the macaroni to cook, add in the Velveeta Cheese to make the creamy broth. Keep stirring until it is melted.


Other Tips and Options
- Use a rotisserie chicken.
- You can use leftover chicken from a previous meal. It can be white or dark meat shredded chicken.
- Add a little heavy cream.
- If you are watching your sodium intake, use low sodium chicken broth or make your own chicken stock.
- Use spaghetti or egg noodles instead of macaroni.
- For an even heartier soup, add a couple of Yukon gold potatoes (diced).
- If you are not a fan of Velveeta, add a block of cream cheese (cubed) instead to get a creamy texture.
- Top with grated cheddar cheese or Parmesan cheese.
- Serve with garlic bread or some type of crusty bread. Cheddar Bay biscuits are also great with this soup.
- Serve with tortilla chips.
- Serve the warm soup bowls in bowl cozies.
- Store leftovers in an airtight container in the refrigerator.

This is one of the quickest soups you will find. It is very flavorful, and the Velveeta cheese makes it very creamy.
Ingredients
- Chicken (1-2 lbs. fresh chicken cut into cubes or 3 large cans of chicken)
- 1 Small Onion, Diced
- 1 Family Size Carton of Chicken Broth
- 1 Can of Rotel Tomatoes
- Elbow Macaroni
- Olive Oil
- 1/2 a Block of Velveeta Cheese, Cubed
- 6-8 Cups of Water
- Cilantro (Optional)
