Easy Coconut Corn Side Dish Recipe

A few weeks ago, the ladies of our church planned a Hawaiian Salad Luncheon. I was a little caught off guard by this, but I came up with an easy Coconut Corn recipe.

I really let myself get stressed out over this, because I could not really think of many Hawaiian salads.

After pouring over the Internet, I ended up taking a few ideas and putting them together. An Easy Coconut Corn side dish was the result.

Coconut Corn

This dish isn’t exactly a salad, but it can be eaten like one if you choose. It is good hot or cold.

Ingredients

Various ingredients, including canned whole kernel corn, coconut milk, a bag of coconut flakes, and salted butter, are arranged on a kitchen counter—perfect for preparing a delicious coconut corn side dish recipe.

Instructions

  1. Combine all ingredients into a medium sized saucepan and cook on medium heat until it is hot.
  2. Serve and enjoy!

    2. I have never heard of this recipe before Susan. My husband loves both, so I am betting he would love it. He is always requesting corn with dinner, I just like to try new things other than corn. Thanks for sharing!
