A Gift of Long Ago

From a very young age, I can remember eating my parents’ homemade cornbread. It was pretty much a staple around our house. We would have it with my dad’s stew, with red beans (all the time), a bowl of chili, and even with crispy bacon and wilted lettuce!

Early in our marriage, Jay asked my parents for the recipe to their cast iron skillet cornbread. He loved it so much and wanted to be able to make it whenever he wanted. It was around Christmas time, so instead of just giving him the recipe, my mom made a very memorable gift!

It is one that still sticks out in our memories today and a favorite thing of ours!

She premade several packets of the dry ingredients, added the instructions, the full recipe, and a new 10-inch cast iron skillet. Since these skillets last through the generations with just a little seasoning, we still use it on a regular basis.

What You’ll Need to Make the Gift Basket

I took note of the best deals I could find while I was putting a gift basket together. The brown links below are the items I used (or very similar) in my gift baskets.

#1 The Core Items

  • cast-iron skillet (roughly 10–12 inch is perfect) — this lasts generations and pairs beautifully with hearty recipes. Lodge cast iron is very nice, but you can also find nice cast iron without the name.
  • Several zip-top or cellophane bags for the dry cornbread mix packets.
  • Ingredients for the dry cornbread mix packets (See below)
  • A heavy weight card-stock recipe card or printable insert with the instructions.
  • A decorative basket or wooden tray, along with tissue paper or shredded filler paper.
  • Optional: tea towels, a jar of honey, maple syrup, butter, or a small bottle of olive oil to go along with the cornbread.
  • A large cellophane bag to put the finished basket in and a gift tag, bow, or ribbon for a finishing touch.

#2 Dry Cornbread Mix Packet Contents

These little dry ingredient packets are only 4 ingredients! They are very quick and easy to put together. In fact, it would be worth the time to make yourself a few pre-made packets.

Based on my parents’ homemade corn bread recipe, each packet should contain these quality ingredients:

  • 1½ cups corn meal
  • ⅓ cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Make as many packets as you want to add to the gift basket. 

Label each packet clearly with “Just add 1 egg + 2 cups buttermilk + oil” (add the cooking instructions below).

This makes it easy for your recipient to bake fresh delicious cornbread or cornbread muffins without measuring. They will enjoy the ease of a boxed mix with the taste of homemade Southern cornbread. It is the easy way to make this perfect side dish.

Optional: We prefer the original recipe just like it is. However, if you or the person you are gifting the basket to likes a sweeter cornbread, add a couple tablespoons of sugar to the dry ingredient mixes. It will give it a touch of sweetness.

#3 Recipe Card / Package Instructions

Print the card above or create your own (4″ × 6″ or similar) that says:

Homemade Cornbread Recipe (with Mix)

Wet Ingredients to add to the mix:
• 1 egg
• 2 cups buttermilk
• Vegetable oil (enough to coat your skillet)

Instructions:

  1. Preheat your oven to 450°F. Pour enough vegetable oil into the skillet to coat the bottom and sides; place your cast-iron skillet inside the oven and allow the skillet to heat.
  2. While the oil heats, empty one packet of the dry mix into a large mixing bowl. Add 1 egg and 1 cup buttermilk; stir well. Then add the remaining 1 cup buttermilk and mix again.
  3. Carefully pour the cornbread batter into the hot cast iron pan(with oil) or muffin pan if desired. The hot oil gives the cornbread a crispy bottom and sides. Bake 25–30 minutes or until golden brown and set. The cook time may vary with your oven.
  4. Serve this moist cornbread warm and with plenty of fresh butter.

#4 Assembling the Gift Basket

  • Line your basket or tray with shredded kraft paper or decorative tissue.
  • Place the cast-iron skillet upright (so the handle shows).
  • Arrange several premade dry mix packets neatly beside or inside the skillet. Label each packet with the recipe name and instructions.
  • Insert the recipe card so it’s visible and tie it with jute or clip it to the skillet handle.
  • Add any optional extras (jar of honey, butter dish, oven mitt, olive oil, dish towel, cast iron muffin tins, etc.) for extra charm.
  • Finish with a large cellophane bag, a ribbon or gift tag.
  • Include a small note: “Because comfort food deserves quality cookware. Enjoy!”

If the items are too low in the basket to show properly, add some sort of extra filler or styrofoam to the bottom of the basket to raise them up.
