Instructions
- Combine first 4 ingredients: In a medium saucepan, mix together the sugar, cocoa powder, butter, and milk.
- Heat to a boil: Cook over medium heat, stirring constantly so nothing sticks or burns. Bring the mixture to a rolling boil.
- Cook just right: Once it reaches a full boil, continue stirring and cooking about 1 minute.
- Remove from heat & add vanilla: Take the pan off the stove and stir in the vanilla extract.
- Beat to thicken: Beat by hand (a large spoon works nicely) until the icing reaches the perfect thick, glossy spreading consistency – about 3 minutes.

- The more holes you poke in the cake, the more icing you will need.
- Large holes (made with the end of a wooden spoon) require more icing.
I put too many large holes in the poke cake. My mom and I made a double recipe of the icing and then had to go back and make a third. It still did not cover the cake very well, but all of that chocolatey fudge got all inside that cake! It was delicious!

- 1 t. of Vanilla
Instructions
- Mix the first four ingredients in a sauce pan and stir.
- Heat the mixture on medium heat and stir constantly. When the mixture comes to a rolling boil, cook it for 1 minute. (If you make a double recipe, let it boil for 3 minutes.)
- Remove it from the heat and add the vanilla.
- Beat the icing (by hand) until it is the right thickness. (She gets hers pretty thick so that when it hardens, it is actually like fudge.) I timed this to be about a 3 - 3 1/2 minute process.
- Spread the icing on the cake. The icing is still pretty runny but will set up as it sets.

It is mine too! My mom makes this all the time, and she is kind of known by this icing. I made it for the first time and was surprised at how easy it was. I don’t know if I want to take on her cake yet though.
