Happy Monday!
Are you watching March Madness? I never was that interested until a few years ago when we competed at the office. Last year we did it again, but we also had a family competition going. This year I am only in the family competition, and I am so far at the bottom that I think it is all over for me. 🙁 Oh well, it is fun anyway.
If you are in a bracket, I would love to hear how you are doing and who you chose as the overall winners.
Jury Duty Update
Last week I mentioned how stressed I was about jury duty. When will I learn to trust the Lord? I had to be there at 9:30, and at 9:35, the judge came out and let us know that all 3 cases were settled out of court – one happened that very morning. Answered prayer!
Whatever you have going this week, I pray you have a good one. Let me know if I can pray for you specifically in any way.

One of My Favorite Potato Recipes
This is not really a recipe, but it is something you just kind of throw together. Get a bag of small Honey Gold potatoes. I get them at Walmart, but I am sure any brand would work.


- Cut the potatoes in half.
- Boil until they are tender.
- Drain almost all of the water.
- Add about 3/4 of a stick of butter cut into pats.
- Pour in some heavy cream (however soupy you want them). We don’t want them too soupy, but the cream sure makes them tasty.
- Salt & Pepper.
- Mash with a meat chopper. You can mix them in a mixer if you want, but this is so easy, and you get little chunks of potatoes.

I could not find a finished picture. This picture shows the potatoes as I am just about to start mashing them.
If you get a chance, give these a try. They are so good, and you can make them in less than 30 minutes!
I love this meat chopper. I use it for ground meat, potatoes, guacamole, and cornbread dressing. There are probably many more uses though.
