Some of the best meals in our home are the ones that come together quickly but still taste like you spent hours in the kitchen. This sour cream chicken enchilada casserole is one of those recipes.

It has all the creamy, cheesy, comforting flavors of traditional enchiladas, but without all the rolling, filling, and extra time it would take to make them.

Jay has been making this version for years, and it has become a true family favorite. It’s simple, delicious, and perfect for busy nights when you still want something homemade on the table. It is the perfect comfort food.

This recipe gives you the classic enchilada flavor but in the easiest way possible. That is exactly what we need on busy days.

How to Make Easy Chicken Enchilada Casserole

Ingredients

All of these ingredients are basic items that you may already have on hand. This is a very versatile recipe, so you can add and take away as you prefer.

The measurements do not have to be exact. If you notice in the picture, I have two containers of sour cream. Neither of them was full, so we just estimated and added them both.

This is a very flexible recipe!

Here are a few optional ingredients you might like to add:

  • Chopped cilantro
  • Diced jalapeno peppers
  • Chopped poblano peppers
  • Diced yellow onion

You can tear the tortillas into strips to make them fit into the baking dish a little better.

Instructions

  1. Preheat oven to 350 degrees, and spray a 9X13 baking dish or a casserole dish with cooking oil to prevent sticking.
  2. In a pan, heat the soup, sour cream, verde sauce, and green chiles on the stove over medium heat. Once the sauce is warm, add the drained chicken and warm together.
  3. Dip enough tortillas into the sauce mixture to line the bottom of the baking dish.
  4. Spoon a layer of the soup mixture over the tortillas and top with a layer of cheese. Add a layer of tortillas (you do not have to dip these – only the first layer needs to be dipped in the sauce.)
  5. Continue the layering process (tortillas, sauce, cheese) and end with the cheese on top. This usually makes three layers. Be sure to use all of the remaining sauce.
  6. Bake at 350 degrees for about 20 minutes or until it is bubbly and melted. Let it rest for about 5 minutes before serving.

Quick meals like this are a staple in our home, especially during busy times. We pretty much have this and other quick meals on repeat.

Sour Cream Chicken Enchilada Casserole

Jay wanted to take the delicious taste of sour cream chicken enchiladas and create a 30 minute meal. He came up with a delicious easy version - Sour Cream Chicken Enchilada Casserole.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • Flour tortillas
  • 1 large can of Cream of Chicken Soup
  • A large container of Sour Cream (16 oz.)
  • 7 oz. Bottle of Verde Sauce (We use Herdez.)
  • 1 small can of chopped green chiles
  • 2 large cans (12.5 oz.) chicken, drained (You can use cooked fresh chicken, shredded if you want.)
  • 1 Lb. shredded cheese of choice - We use cheddar.
  • Cooking spray

Instructions

  1. Preheat oven to 350 degrees.
  2. In a pan, heat the soup, sour cream, verde sauce, and green chiles on the stove over medium heat.
  3. Once the sauce is warm, add the drained chicken and warm together.
  4. Spray a large baking dish with cooking oil to prevent sticking.
  5. Dip enough tortillas into the sauce mixture to line the bottom of the baking dish.
  6. Spoon a layer of the soup mixture over the tortillas and top with a layer of cheese.
  7. Add a layer of dry tortillas (you do not have to dip these - only the first layer needs to be dipped in the sauce.)
  8. Continue layering (tortillas, sauce, cheese) and end with cheese. This usually makes three layers.
  9. Bake at 350 degrees for about 20 minutes or until it is bubbly and melted.

Notes

This is easy to customize. If you like things spicy, you can add more green chiles or add diced jalapenos. You could also add more chicken or even throw in some chopped cilantro.
