It was another great weekend! We got to go to Waco to watch Caddie compete in the triple jump for track & field regionals. Although she did not advance to state, she set a new school record!

Mindset Reminders

I wanted to share a word and thought that keeps coming up in study and vocabulary – Mindset!

I was always big on mindset as a school counselor and shared the importance of it with my students on a regular basis. I even wrote a blogpost about it. If you have an interest in reading more about mindset, you can read about it here.

This weekend, I saw different ways to look at mindset.

  • In Sunday School, we were talking about noticing people and their needs when we are out and about. In my mind, I am usually focused on the task at hand. When that is my mindset, that is what I see. I do not even see the opportunities right in front of me. (This very thing really spoke to me when I read Titus.)
  • Jay is preaching through the book of Philippians, and we looked at Philippians 1:12-14 this week. Paul was writing from prison, and instead of being upset with his circumstances, he had a totally different mindset.
    • Paul had no privacy because he had guards around him 24/7 – he was even chained to them. Instead of seeing this as a burden, he saw it as having a full time audience!
    • Jay’s words, “One of the most important missionaries of the Church had been removed from the mission field but placed in another one.”
    • Because of this new mission, Paul reached many people for Christ, even many of the guards and beyond. The Lord had not removed Paul from the ministry. He simply had a new direction for him.

I am going to do better in keeping my mindset focused on the things of the Lord. Who is with me?

A New Recipe to Share – Chicken in its Own Gravy

4 Ingredient Iced Coffee

I found a way to save money and still enjoy really great tasting iced coffee. I saw this on the “That 40 Year Old Guy” page and gave it a try. Delicious!!!

If you like iced coffee, you will love this. Add:

  • 2 T. Sweetened Condensed Milk
  • 3 t. Instant Espresso Coffee (I love Cafe Bustelo!)
  • 2 oz. Room Temperature Water

Froth it all together. I can’t find the frother that I have, but this one is similar. If you are getting one, take note of the difference in battery operated ones and rechargeable ones. I have had a battery operated one for a while, but every time I try to use it, the batteries have run down on it. I finally got a rechargeable one and love it!

  • Next, add ice to your cup.
  • Fill the rest of the cup with half and half or milk.
  • Stir well.

TIP: I have been freezing leftover coffee in ice trays. That is what I use for my ice. Now when it melts, it doesn’t get watery!
