Happy Monday!

I don’t know what it is like where you are, but we have had the stormiest weekend I can remember in a long time. We have little ponds all over the place, and the temperatures range from the 50s to the 80s – it is marvelous!!!

The last May I remember being this cool was my last camping experience. The kids were little, in fact, it was Memorial Day weekend of 1992. We were camping in a tent when the cold front came in, and we were miserable.

Retirees in nice campers were so generous and brought us all blankets and jackets. After one night of that, I had had enough. We went to a hotel, and I have not been camping in a tent since! 🙂

It is funny how temperature can have such a great affect on you!

Although it was not pleasant at the time, we have great memories of that little trip. I think that there are always blessings in the midst of the hard times. I have seen that in so many areas!

Regardless of what you may be facing, I hope this week is filled with many blessings. Be sure to let me know if you have specific prayer needs.

A New Recipe to Share – Foil Packet Meals

These meals are so easy and versatile!

New Dessert Idea

I follow Miz Helen’s Country Cottage, and last week she shared an. easy twist on a familiar dessert. She calls it, “Old Fashioned Strawberry Pudding.” I had to try it.

A dessert with sliced strawberries, custard, and a dollop of whipped cream on a biscuit, served on a white plate with a blue rim atop a brown and white checkered cloth—classic comfort from Apron Strings.

Get all of the details in the link above. It is very similar to a strawberry shortcake but with pudding. Who knew a little pudding could make such a difference! It was delicious!
