Over the years, we’ve learned that preparing a few simple vacation meals at the condo, cabin, or beach house can save money, reduce stress, and give you more family time. Some of our favorite vacation memories have come from being around the table (or even eating outside at the beach) after a long day in the sun.

One of the biggest reasons we cook a few meals on vacation is simple – restaurant meals add up quickly.

When you’re feeding an entire family multiple times a day, vacation food expenses can become one of the largest parts of the trip’s budget. We don’t cook all of our meals, but even replacing just a few restaurant meals with simple home-cooked meals can save hundreds of dollars over the course of a week.

Things like taco bars, spaghetti, baked potatoes, sandwiches, or Crock Pot meals can feed a large group for a fraction of the price of dining out.

Vacation restaurants are often crowded during peak travel months. Between traffic, parking, waiting for a table, waiting for food, and then driving back, a simple dinner can easily take several hours. There have been times that we have waited for almost two hours just to get a table.

  • Spaghetti – Spaghetti is inexpensive, filling, and it is easy to make in large quantities. (My daughter-in-law always makes this for us when we are on a family trip.)
  • Chicken Spaghetti – This creamy comfort food is such a crowd pleaser! It is perfect after a long day at the beach. This typically makes a big batch. It will feed several or feed you throughout the week.
  • Chicken Pot Pie – This meal is warm, comforting, and easy to prepare ahead of time.
  • Baked Ham – A baked ham can feed a crowd for multiple meals and leftovers can be used for sandwiches the next day.
  • Fajitas – Fajitas are fun because everyone can customize their own plate. Serve with:
    • Chips and salsa
    • Guacamole
    • Queso
    • Rice and beans
  • Sour Cream Chicken Enchilada Casserole – This is one of the easiest vacation comfort meals because it can often be assembled ahead of time.
  • Farmers’ Market Chicken – Fresh summer produce added to grilled or baked chicken creates an easy and healthy vacation dinner. Sheet pan recipes are very versatile, so they even reach those picky eaters.
  • Baked Potato Bar – A baked potato bar is inexpensive, easy, fun, and customizable. Topping ideas:
    • Cheese
    • Bacon
    • Sour cream
    • Broccoli
    • Chili
    • Green onions
    • Butter
    • Pulled Pork
  • Variety of soups – There are many to choose from, and they are usually very easy to make. These are especially good for mountain vacations, where it could be a little cool in the evenings.

One of the best meals we used to have at the beach was Jacob’s homemade Seafood Gumbo. You talk about delicious! He would go to the market each year and get the freshest seafood to make it. It was amazing!

Quick and Easy Vacation Meals

All of these meals are very quick and easy to make.

  • Nacho Bar – These are easy, fast, and fun for family game nights. Be sure to get everyone’s favorite toppings.
  • Tacos – Taco night is one of the easiest vacation dinners because everyone can build their own.
  • Sandwiches – Simple sandwich nights are underrated on vacation. Sandwiches also make great lunches at the beach. Ideas include:
    • Ham and cheese sliders
    • Club sandwiches
    • Chicken salad sandwiches
    • Pulled pork sandwiches
    • Hawaiian roll sliders
    • Pepperoni sandwiches (one of my favorites!)
    • Cheese sandwiches
    • Peanut butter and jelly
    • Chopped Italian Sandwich
  • Frito Pie – Warm, easy comfort food that takes very little effort. Let everyone make their own. If you make pulled pork as a meal one night, you can add leftovers as a topping.
  • Chicken Alfredo – Quick pasta meals are perfect for busy vacation days. Chicken alfredo is easy enough to make, but it also comes ready to go in the freezer section of the grocery store.
  • Hot Dogs – Perfect at the pool, lake, campground, or beach house – indoor or outdoor.
  • Sloppy Joes – Easy to make, inexpensive, and kid-friendly.

Crock Pot Vacation Meals

One of the easiest ways to simplify vacation dinners is by using a Crock Pot or slow cooker. Check with the vacation rental because many places provide crock pots for this very purpose.

You can start dinner in the morning and come back to a ready-to-eat meal after a long day of activities. Here are a few ideas:

  • Beef Tips and Noodles – Rich comfort food that feels hearty and filling.
  • Pulled Pork – Serve as sandwiches, tacos, nachos, BBQ Frito pie, or baked potato toppings.
  • Pepper Steak – It is easy to have with rice or noodles.
  • Roast with Vegetables – This is a classic one-pot meal that requires minimal effort. If you cook extra, roast sandwiches are delicious!

Snacks can save a surprising amount of money and prevent constant fast-food or concession stand stops.

Make a Simple Meal Plan

Planning even a few meals ahead of time can cut a lot of stress. If you are going with several people, make a grocery list together. Keep everything simple and easy.

Grocery Shopping Before Peak Hours

Shopping early in the morning after arrival can help avoid crowded stores. If you have a Wal-mart+ membership or other delivery service, you may be able to make an order and have it delivered. It can be difficult to do this during those peak seasons though.

We have also found that when we are about an hour away from our destination, we can usually find a Sam’s, Costco, or Wal-mart. If they are not that crowded, we go ahead and stop. Again, be sure you have your shopping list ready. I have done this with and without a shopping list. Having it prepared will definitely save you a lot of time, stress, and money.

Prep Ingredients Before Leaving Home

Anything you can do before leaving for vacation can help. This can save you a lot of time during vacation. You will have to carry a cooler while you travel though. Things like:

  • Pre-cooked meat – My daughter has done this for us on occasion.
  • Chopped vegetables
  • Frozen casseroles – Some people actually make freezer meals at home and carry them to their destination. I have never done this myself, but I can see the benefits in doing that.
  • Seasoning mixes
  • Canned Sauces – The last time we went to the beach as a family, my daughter brought homemade and canned spaghetti sauce.

Use Disposable Pans and Items When Needed

Vacation is not always the time to worry about extra dishes. Most condos will have a dishwasher, but disposable items are still helpful.

One of the sweetest parts of family vacations is just being together.

Sometimes we can get so focused on making everything perfect that we forget the real gift is the time shared at the table, in the car, on the beach, or sitting together late at night talking and laughing.

I never thought about bringing meal-prepped items with us to the cabin beyond travel days, but you’re right, it would be such a time saver going and coming. We leave a prepped dinner in the freezer to make meals easy when we get home, but gah that drive is a beast, and then we get home and have to wait for the lasagna to thaw.
