Fresh Shrimp Ceviche Recipe (Easy, Fresh, and Full of Flavor)

I had always wanted to try fresh shrimp ceviche, but I wasn’t sure exactly what it was, so I was a little apprehensive. It is shocking, and I have to say that I surprised myself when I decided to try it for the first  time. I was not at a restaurant with health regulations, I was in a 3rd world country on the beach! However, I was not disappointed – it was by far the best ceviche I have had to this day!

Since that time in early 2025, I have ordered it at several restaurants. I finally decided that it was time for me to learn to make this refreshing dish for myself.

If you are like I was and are not exactly sure what ceviche is, let me tell you, it is a delicious appetizer made with juicy shrimp, fresh vegetables, bright citrus, and plenty of cilantro. This recipe is simple to prepare and bursting with flavor.

One of the best things about this recipe is that it can be made using fully cooked shrimp, making it both easy and safe while still allowing the shrimp to marinate in fresh lime juice for that classic ceviche flavor. The lime juice doesn’t truly “cook” the shrimp like heat does, but it does firm the texture and infuse every bite with fresh citrus goodness.

How to Make Fresh Shrimp Ceviche

Fresh ceviche has become one of our favorite warm-weather meals because it’s light, healthy, colorful, and super easy to prepare. It also reminds me of being on the beach!

There are two different ways to make ceviche:

  • The traditional way – The shrimp and even other seafood marinates in citrus juice instead of being cooked.
  • A more convenient (and safer) way – Use fully cooked shrimp.

The first time I tried it, it had been made the traditional way. However, without having high quality (sushi grade) raw shrimp, I do not feel comfortable using that method. For this recipe I will be using fully cooked shrimp. The lime juice will still penetrate the shrimp, firm the texture, and give it that bright, fresh ceviche taste.

Ingredients for Shrimp Ceviche

This recipe is very versatile! Add what you want and control the amounts of each item. This is a base line to go by, but when I make it for just the two of us, I use a lot less ingredients.

  • 1 – 2 pounds cooked medium shrimp, peeled, deveined, and cut into bite-sized pieces
  • 1½ cups fresh lime juice (approximately 10–12 limes)
  • 3 – 4 Roma tomatoes, diced
  • 1 medium red onion, finely diced
  • 2 jalapeños, seeded and finely chopped
  • 1 serrano pepper, finely chopped
  • 1 cup chopped fresh cilantro
  • 1 – 2 ripe avocados, diced
  • Salt, to taste
  • Black pepper, to taste

Step-by-Step Instructions

Step 1: Prepare the Shrimp

If you are using frozen cooked shrimp, thaw them completely and pat dry. Cut the shrimp into bite-sized pieces.

If you are using uncooked shrimp, boil according to the package instructions and cool.

Step 2: Marinate in Lime Juice

Place the shrimp into a large glass bowl. Pour enough fresh lime juice over the shrimp to completely cover it with plastic wrap. Cover and refrigerate for 30 minutes to 1 hour.

Although the shrimp is already cooked, the lime juice continues to flavor the shrimp and gives it the classic ceviche texture.

Drain most of the lime juice before mixing in the vegetables, leaving just a small amount for moisture.

Step 3: Add the Fresh Vegetables

Stir in each of these diced vegetables:

  • Tomatoes (Roma tomatoes work well with this.)
  • Red onion
  • Jalapeños
  • Serrano pepper (This will add a little heat. If you want it to be a mild version, omit these.)
  • Fresh cilantro

Season with salt and pepper to taste.

Mix well.

Step 4: Chill

Cover and refrigerate another 30 – 60 minutes to allow the flavors to blend together.

Step 5: Add Avocados

Just before serving, gently add in the diced avocado. Adding the avocado at the last minute keeps it from becoming mushy or turning brown.

What to Serve with Ceviche

Fresh ceviche is delicious served with:

  • Tortilla chips
  • Saltine crackers
  • Club crackers
  • Tostadas
  • Add them to corn tortillas for a different kind of shrimp tacos.

Optional Ingredients to Customize Your Ceviche

One of the best things about ceviche is how easy it is to customize. Only add the vegetables you like.

Shrimp is not the only seafood protein you can add to ceviche. We have had it with different types of fish (sea bass, mahi mahi, or fresh white fish are good options), lobster, clams, and a few other items. It is all about preference.

  • Cucumber
  • Radishes
  • Green onions
  • Bell peppers
  • Fresh corn
  • Mango
  • Pineapple

  • Habanero peppers (No thank you!)
  • Extra serrano peppers
  • Red pepper flakes
  • Hot sauce

For More Flavor

  • Garlic
  • Celery
  • Fresh orange juice
  • Lemon juice
  • Tajín seasoning
  • Seasoning Salt

Tips for the Best Shrimp Ceviche

  • Use Fresh Lime Juice – Bottled lime juice really doesn’t have the same fresh flavor. Freshly squeezed limes make a difference.
  • Don’t Over Marinate – Cooked shrimp can become rubbery if left sitting in the lime juice too long. Thirty minutes to one hour is usually perfect.
  • Add Avocados Last – This keeps them from turning brown. If you make a large batch of ceviche and plan on having leftovers, add the diced avocados to each individual serving.
  • Serve Cold – Ceviche tastes best when it is thoroughly chilled.

As a side note, if you didn’t want to spend the time cutting up the fresh vegetables, you could start with fresh pico de gallo and drain it well. It is basically the same vegetables, but maybe not the same ratio.

How to Store Leftover Ceviche

Store in an airtight container in the refrigerator for up to two days. If you add avocados into the ceviche, it will be best if it is eaten the same day it is made.

Frequently Asked Questions

Is ceviche actually cooked?

Traditional ceviche uses citrus juice to marinate the proteins in raw seafood, which changes its texture and appearance. However, the USDA still recommends cooking seafood to a safe internal temperature to reduce the risk of parasites and illnesses. This recipe uses fully cooked shrimp, then marinates it in lime juice for classic ceviche flavor.

How spicy is this recipe?

This recipe is a medium level of heat. However, the spice level is up to you.

If you want a milder version, leave out the Serrano pepper and make sure the jalapeños are mild ones.

If you want a spicier version, add more peppers or spicier versions.

Can I make this ahead of time?

Yes, prepare everything except the avocado and keep it refrigerated. The longer it sits, (within 2 days) the more the flavors blend.

What kind of shrimp should I buy?

Medium or large cooked shrimp work best. I prefer to get pre-cooked shrimp that are already peeled and deveined. It makes it much easier and faster.

Can I freeze ceviche?

No, it does not freeze well at all!
