I am back at school for another year.  There are no students yet, but it is busy nonetheless.  With this going on, my mind is going in a million directions with several things I would like to share, including one of my favorite apple desserts.

  • I mentioned Sunday that I planned our menu “guide” for the month to try and get a little more organized.  I learned on the first day to communicate with your spouse.  Jay knew what the menu was and laid out Salmon to thaw.  When I got home, I also laid out Salmon to thaw.  We ended up having to cook more Salmon than we planned or needed.   

  • If there is a Hobby Lobby near you, all of their Spring Collection is now 75% off!  I have stocked up on some Christmas gifts and a housewarming gift.

  • If you stock up on Christmas gifts, remember what you get.  I was about to get gifts for all the friends I work with when I realized I did that during the After Christmas sale.

  • I am currently reading the book of Numbers.  There are so many nuggets!  Yesterday I read chapter 14, and this verse stood out to me:
    • “The Lord said to Moses, ‘How long will these people despise Me?  How long will they not trust in Me despite all the signs I have performed among them?’”
      • Why do we tend to forget His signs, blessings, and the way He has delivered us in the past?
      • He is constantly delivering us and blessing us.  How hurtful it must be to have us not trust Him to handle our situations.

Easy Caramel Apple Dump Cake

I found this recipe a while back on Pinterest, and I absolutely love it! This Caramel Apple Dump Cake is easy and quick.  I keep all of the ingredients on hand so I can throw it together quickly when needed.

Ingredients:

  • 2 (21 oz.) Cans of apple pie filling
  • ½ (11 oz.) Bag of Kraft Caramel Bits (found in the baking section of most grocery stores)
  • 1 (15 oz.) Box of yellow cake mix
  • 2 Sticks of butter, melted
  • Vanilla Ice Cream for serving (optional)

Directions:

  • Preheat your oven to 350 degrees and spray a 9X13 baking dish with non-stick spray.
  • Spread both cans of apple pie filling onto the bottom of your dish.
  • Sprinkle half of the bag of caramel bits evenly over the top of the pie filling.
  • Evenly distribute the dry cake mix over the top.
  • Pour the melted butter evenly over the cake mix, covering as much of it as you can.
  • Bake uncovered in the center rack for 30-40 minutes or until the buttery cake mix turns a deep golden brown.
  • Allow it to cool for about 5 minutes and then serve warm with vanilla ice cream.
