You can even substitute this Loaded Mashed Potato Casserole for baked potatoes when you have steak. It has the same delicious flavors, and you don’t spend a lot of time fixing your potato while your steak gets cold! To me it is a great option.

This recipe calls for simple ingredients that you probably keep in your kitchen. It is a “Throw it Together” meal that tastes delicious!

This recipe does not call for specific amounts of each ingredient. The ingredients listed are a basic measurement. Use more or less of the ingredients you want.

  1. Wash, peel, and cut the potatoes into cubes. You can leave the peeling on if you want,
  2. Put the potatoes in a large pot or Dutch oven and cover with water. Add salt and boil until the potatoes are tender. (approximately 25 minutes)
  3. Drain the water from the potatoes. I usually leave just a little in the bottom of the pan.
  4. Add the butter, cheese, sour cream, and bacon. Use a hand mixer to blend the ingredients until they are smooth and creamy. If the potatoes are too dry, add more sour cream, butter, or even a little whole milk or heavy cream.
  5. Put the potatoes in a baking dish and top with a little cheese and butter. Be sure to use cooking spray to coat the dish.
  6. Bake at 350 degrees until the cheese and butter are melted and golden brown, about 10-15 minutes.

Other Additions and Tips

  • If your casserole dish does not have a lid, cover it with aluminum foil before baking.
  • Add small chunks for cream cheese instead of cheddar for a creamier texture.
  • Use sharp cheddar cheese for a tangier casserole.
  • There are many ingredients you can use as potato toppings:
    • Diced green onions
    • Fresh chives
    • Small pieces of diced ham or turkey breast
    • Ranch dressing
    • Additional bacon
  • Yukon Gold potatoes work well also. I usually do not peel these.
  • Use leftover mashed potatoes for a quicker version of this easy potato side dish.
  • Turkey bacon would also work.
  • If you want a chunkier potato casserole, use a potato masher instead of a hand mixer.
  • This perfect side dish can be prepared in advance and refrigerated until ready to serve. Serve it within 3-4 days.
  • You could serve this along side many main dishes, or it could be the main dish itself.
  • Leftover Mashed Potato Casserole can be stored in an airtight container and refrigerated.

  • 6-8 Pieces of Crispy Bacon, Diced into Small Pieces
  • 1/2 Cup of Sour Cream
  • 1 Stick of Butter (Cut into Small Pieces)
  • 1 Cup Grated Cheddar Cheese
  • Salt & Black Pepper to Taste
