
My dad and I used to make and preserve fresh salsa, and it was delicious. It was also back-breaking and time consuming. I had given up on making salsa until I found this quick, easy, and delicious recipe that showed how to make Fresh Roasted Salsa!
Fresh Roasted Salsa Ingredients

Start with fresh ingredients:
4-6 large Tomatoes
1 Large Onion or 3-4 Small Onions
3 Large Jalapenos
1 Lime (cut in half)
1 Bunch of Cilantro
Salt, Pepper, & Garlic Salt
Fresh Roasted Salsa Directions

Preheat the oven to 350. Cut all vegetables except the cilantro into large chunks and place on a baking sheet. Add the lime halves to the baking sheet. Season the lime and vegetables generously and bake in the oven for 20-30 minutes or until they are roasted well.


Remove and place the roasted vegetables into a large food processor. Squeeze the lime juice onto the vegetables, and add the cilantro to the top. I use kitchen scissors to cut the cilantro into smaller pieces. Blend it to the desired consistency, and taste to see if any added seasoning is needed. Pour it into a dish and enjoy! The roasted vegetables give this salsa added flavor.
