Easy Recipe to Make Homemade Fresh Roasted Salsa

My dad and I used to make and preserve fresh salsa, and it was delicious. It was also back-breaking and time consuming. I had given up on making salsa until I found this quick, easy, and delicious recipe that showed how to make Fresh Roasted Salsa!

I absolutely love chips and salsa! In fact, anytime we go to one of my many favorite Mexican food restaurants, the chips and salsa are one of the highlights. They are my appetizer and my dessert.

When my dad and I used to make our homemade salsa, I loved having having an abundance to eat and share with others. However, after a few years of all of that effort, we called it quits. I had accepted the fact that I would only have the store bought versions of salsa. Then I found the easiest fresh salsa recipe ever. There is a hint of smokiness with a depth of flavor you don’t find in other salsas, because of the roasted ingredients.

This roasted salsa recipe is best when you use fresh produce. If you don’t have your own garden full of these vegetables. find a local farmers market or even your local grocery store. The fresher the ingredients, the better the finished product will be. See the recipe below to make this easy homemade salsa.

Instructions

  1. Preheat the oven to 350 degrees.
  2. Cut all vegetables except the cilantro into large chunks and place on a rimmed baking sheet (sprayed with cooking spray). 
  3.  Add the lime halves to the baking sheet.
  4. Season the lime and vegetables generously and bake in the 350 degree oven for 20-30 minutes or until they are roasted well.
  5. Remove the roasted vegetables and place into a large food processor. 
  6. Squeeze the lime juice onto the vegetables, and add the (chopped) cilantro to the top.
  7. Blend it to the desired consistency, and taste to see if any added seasoning is needed.  
  8. Pour it into a dish and serve with your favorite tortilla chips! 

The roasted vegetables really give this salsa added flavor. Smoky goodness!

You choose the consistency of the salsa. If you want a chunky salsa, blend it less time. For a smooth salsa, blend it longer.

Roasted Salsa Tips and Information

  • I use kitchen scissors to cut the cilantro into smaller pieces. 
  • Use garlic cloves instead of garlic salt if you like garlic.
  • For a milder salsa, remove the seed from the jalapeno peppers before roasting.
  • If you want a spicier salsa, do not remove the jalapeño seeds.
  • It is delicious while it is hot, at room temperature, or cold. 
  • Store it in an airtight container and refrigerate 5-7 days.
