How to Make Farmer’s Market Chicken and Vegetables

It is always good to have a good influence in your life when it comes to eating healthy meals, especially when you don’t normally lean that way. This weekend, my daughter-in-law came for the weekend and made a dish she called, “Farmer’s Market Chicken and Vegetables.” I didn’t know a healthy meal could be that tasty!

A few days before she came to visit, she mentioned wanting to make this dish. I had her send me the ingredients so I could add them to my grocery order. Since I already had the best organic chicken from my daughter’s ranch, I only had to buy a few vegetables. This meal ended up being very inexpensive!

She found this recipe on the back of the seasoning package and has made it many times. One of the great things about Farmer’s Market Chicken and Vegetables is that it is very versatile. You may not like the vegetables she used, which is fine. You can pick and choose your favorite veggies. She changes it up regularly.

Ingredients

Chicken Breasts, Cut into Strips
1 Pkg. of McCormick One Seasoning Mix, Farmer’s Market Chicken &
Vegetables Flavor
2 T. Olive Oil
Your Choice of Vegetables, Cut into Chunks

Variations for Farmer’s Market Chicken and Vegetables

Kristy Used:
Corn on the Cob – I didn’t think I would like this, but it was my favorite.
Baby Potatoes (Gemstone Medley)
Baby Bell Peppers
Zucchini
Squash
Baby Carrots

Other Ideas to Try:
Mushrooms
Broccoli
Cauliflower
Onions
Asparagus

Instructions

  • Preheat the oven to 400.
  • Cut all vegetables into bite sized pieces.
  • Mix the seasoning mix and the oil in a large bowl.
  • Put the chicken and vegetables into the bowl and stir, coating all of the pieces with the seasoning.
  • Pour the chicken and vegetables onto a sheet pan, which has been lined with foil.
  • Bake for 30 minutes or until the chicken is done.

A sheet pan covered with a mix of seasoned Farmer's Market Chicken and Vegetables, including sliced corn on the cob, baby carrots, yellow squash, zucchini, grape tomatoes, and baby potatoes. The ingredients are spread out evenly on aluminum foil, ready for roasting.

This was a very quick and easy meal – healthy too. She shared that the purple potatoes (which had a great flavor) were filled with antioxidants and were highly nutritious.

This meal would also be great to prepare for large groups. She made a single recipe for 5 of us, and we had a good amount left over. Keep this one in mind the next time you have a large family gathering.

Since Kristy made this dish for us, we have made it a few times, but we always seem to use different vegetables. That is the great thing about this dish – use what you have.
