New Recipe to Try – Buffalo Chicken Stuffed Bell Peppers

My daughter-in-law came up with a new recipe, and she really liked it. I have added it to the menu for May and will definitely be trying it. She started with a rotisserie chicken and the pictured ingredients. She prepared the rice and did a quick stir-fry of the chicken and vegetables, adding in the Buffalo Sauce to taste. Then she layered everything in a hollowed bell pepper – rice, chicken/vegetables, cheese. She baked it just long enough to melt the cheese, and then drizzled more of the Buffalo Sauce on top of it.

1 | Pepper Steak in the Crock Pot | Add beef tips & 2 jars of beef gravy to a crock pot on low – add 3 bell peppers cut in chunks and 3 bundles of green onions cut in 1 inch pieces. Add lots of pepper & cook until the meat is tender. Serve over rice. |

11 | Salmon Bowl | Lightly saute’ salmon pieces and asparagus ends. Start the bowl with Jasmine Rice, top with Salmon mixture, chopped avocado, and top with cilantro and your choice of dressing. |

Wow. I don’t think that I could meal plan for an entire month at a time. I’m lucky if I meal plan for a week.
I don’t always have the full month ready either, but when I do, it’s nice. Most of the time I am weekly, but at least the menu is planned out for me. 😃
